Earlier this year I was at the gym and the lovely personal trainer who takes boxing classes introduced me to Radical Rocky Road, a recipe developed by Laura Henshaw and Stephanie Smith from Keep It Cleaner (www.keepitcleaner.com.au). Inspired by this recipe as well as Jessica Sepel's (www.jessicasepel.com) version, this delicious snack or dessert I have developed is a healthy take on the usually sugar-loaded version. It is refined sugar-free and sweetened with nutrient packed mejdool dates. With a balance of healthy fats, protein and carbohydrates as fuel, this nutritious snack can be enjoyed as part of a healthy lifestyle. It's also super crunchy and creamy, the perfect combo!
Ingredients
½ cup of coconut oil
½ cup of cacao powder
5 dates
¼ cup of goji berries
½ cup of coconut flakes
½ cup of chopped almonds/any nuts (walnuts would also work well)
¼ cup of cacao nibs
½ cup puffed millet/any other puffed grains
1 teaspoon each of cinnamon, lucuma powder, mesquite powder and vanilla powder
Method
On the stove, in a small saucepan melt the coconut oil and cacao powder under low heat.
To your blender, add the melted coconut oil and cacao along with the 5 dates and blend until well combined.
In a large bowl, combine the remaining ingredients and the blended mixture. Stir until combined.
Line a small baking tray with baking paper and press the mixture into the tray until firm. Place in the freezer for 2 hours or until set. Remove from freezer and slice/break into pieces slice can be
This slice can be stored in the fridge for up to a week/freezer for up to 3 months, but it never lasts long, because it's so god damn good!
